
A note from our friends at Dark Matter Coffee: "We filled these freshly dumped French Oak barrels that still had pooling beer for the green coffee to soak up. When coffee is in its raw and unroasted state, it is porous and easily takes on the characteristics of the barrel, soaking up the moisture from the wood and imparting the profile of the beer or spirits on the coffee. We filled these barrels with a Catuai from Finca San Jeronimo Miramar in Guatemala, spending months aging until we're satisfied with the barrel character of the samples extracted. This Catuai from San Jeronimo is the same variety that we are utilizing in this year's Cafe Deth as well! We've been working with the Bressani Family in Guatemala for over a decade, and last year, some of the Rev team joined us at the farm to conduct fermentation experiments at the mill. These barrel-aged beans have taken on some of the boozy, fruity notes from the wood and beer it previously held, making this a juicy, yet sweet cup to enjoy!"
